In the Marlborough region, sandy soils over slate shingles have become the most desirable locations for planting due to the good drainage of the soil and poor fertility that encourages the vine to concentrate its flavors in lower yields.
Dry-style Sauvignon Blancs are very versatile in accompanying foods and go well with components such as tomatoes, bell peppers, cilantro, raw garlic, smoked cheeses or other pungent flavors that would clash with or overpower many other varieties.
In fact, Sauvignon Blanc is probably the best dry white wine to accompany the greatest variety of foods.
